    3. Chill discs for at least 3 hours (up to 3 days)
  4. Preheat oven to 350°F (177°C)
    1. Line baking sheets with parchment paper or silicone mats
  5. Remove 1 disc of chilled dough from refrigerator
    1. Generously flour work surface, hands, and rolling pin
    2. Roll out disc until 1/4-inch thick
    3. Cut shapes with cookie cutters
  6. Bake cookies
    1. Small cookies (under 4 inches) - 8 minutes
    2. Medium cookies (4 inches) - 9-10 minutes
    3. Large cookies (over 4 inches) - 11 minutes
    4. Rotate pan once during baking for even browning
